How does the wanted system work in GTA 6?

Leaks mentioned a completely reworked wanted system with line-of-sight based cops. Can someone explain how it's supposed to work? Is it similar to the system in Mafia games where you can actually escape by hiding? The GTA 5 system was frustrating.
