Side activities wishlist — what do you want to do in Vice City?

In addition to progressing through the story, what other things should GTA 6 let players do? Here's mine: surfing, deep-sea fishing, golf (expanded from GTA 5), jet ski racing, nightclub management, cooking (drug lab minigame?), street racing, arm wrestling, pool/billiards, karaoke, and casino gambling. Florida is so ripe with opportunity for side content.
